Bleu Cheese Turkey Burgers

Bleu Cheese Turkey Burgers (adapted from Cheeky Kitchen)
1 pound ground turkey
1 cup cooked quinoa or brown rice
1/2 teaspoon garlic salt
Fresh Ground pepper
1/2 cup bleu cheese
1 cup baby spinach (or arugula!)
2 tablespoons honey
2 tablespoons spicy brown mustard
2 tablespoons barbecue sauce
4 tablespoons vegan mayonnaise
6 hamburger buns
In a large bowl, combine the ground turkey, quinoa, garlic salt, and ground pepper. Mix together until well combined. Press a ball of turkey meat into your hands, use your finger to press a well into the center of the burger, and fill with bleu cheese crumbles and bacon. Pat the turkey to hide the cheese. Gently press into a thick patty. Repeat until all the turkey has been stuffed and pressed into patties.
Cook patties on a hot griddle over medium heat until the center of each burger is cooked through. (Sometimes I find it works well to cover the griddle with a lid to ensure complete and even cooking).
In a small bowl, mix together the honey, mustard, barbecue sauce, and mayonnaise. Serve cooked patties on a bun with the honey-mustard sauce and arugula.
