Raspberry Macarons and Chocolate Mint Cupcakes

OK, so I made TWO things this week. yum yum yum. I had been looking for the perfect chocolate cupcake recipe and I think I found it! It's super easy too, you don't even have to use an electric mixer! The mint was just the icing on the cake (ahaha). Maybe I'm impatient for St. Patrick's day.












Chocolate Mint Cupcakes

1 c granulated sugar
1/2 c mayonnaise (I know for reals!)
1 large egg
1 t vanilla
1/2 c cocoa powder (I did 1/4 dutch pressed and 1/4 black for richer flavor)
1/2 t salt
1 t baking soda
1 1/4 c flour
3/4 c lukewarm water

Combine first 4 ingredients in a bowl. Sift dry ingredients together. Add them and the water to creamed mixture, and beat until well blended. Bake at 325 for 20 minutes (start watching them around 18). Makes 12.

Mint frosting:
1 c butter
4 c powdered sugar
1/4 c milk
1/8 t peppermint extract
green food coloring

Beat butter until creamy. Add 4 c powdered sugar, milk, and peppermint extract, beating until combined. Add more powdered sugar if necessary to get right consistency. Add green food coloring until you get desired shade. Do not overbeat or it will separate (I've learned through experience)!

I forgot to comment on this post because I was so distracted by the red velvet cupcakes :D I'm pretty sure you beat me at macarons - these look great (and I still mess up every 2 out of 3 attempts)
