Cherry Avocado Chicken Salad
I'm so hungry.
I was pretty hungry when I was pregnant too. I remember thinking, GEEZ. All I do is EAT. I'd finish one meal and be looking around for the next.
I almost got tired of eating. Me. ME.
Pregnant women are advised on average to eat about 300 calories more than they normally do to sustain the pregnancy.
So I remember thinking man, when am I gonna get a break? I can't wait until I'm done with being pregnant and can go back to eating like a normal person! So I googled how many calories breastfeeding women need to eat a day.
500 more than normal.
So I am now hungrier than a nine month pregnant woman.
Trouble is baby is not yet very tolerant of me cooking meals. Turns out he is very hungry too. Just about always. So I don't get out (or up) much.
Sometimes my husband cuts up pieces of French toast and feeds them to me. That is nice.
Otherwise I just eat what cooks up quick. And dream of the day I'll be able to cook something long and slow and delicious.
Until then I do what the little dictator says. I'm pretty okay with it though.
Cherry Avocado Chicken Salad
This is a bit of a different take on the traditional chicken salad. Cherries add a burst of juicy sweetness, and diced cucumbers give it crunch. The avocado brings it all together with a creamy, nutty flavor. An unusual combination that comes together so well!
Summer Chicken Salad (adapted from Cheeky Kitchen)
4 chicken breasts, grilled
80 cherries, pitted and halved
1 cucumber, peeled and diced
4 avocados, pitted and diced
1.5 cup greek yogurt
6 tablespoons honey
6 tablespoons mayonnaise
pinch of coriander
garlic salt to taste
fresh ground pepper to taste
a sprinkled of fresh chopped dill
In a large bowl, stir all ingredients gently together. Serve on croissants, over lettuce, on toasted baguettes for a lovely summer meal.
