Drunken Apple Cake with Blue Cheese Buttercream Frosting


I love birthdays so, so much. A day that should just be about ME.

That sounds selfish, but it's not meant to be. Everybody should have a birthday that is all about them.

I like to plan mine in advance (just the planning makes me happy).

What would I like to eat for breakfast, lunch and dinner?

What can I wear that will make me feel pretty, comfortable, and special?

What kind of funky, delicious cake can I make myself that no one else would want me to make for them...?


I also like to tell random people, anyone who will listen, that it's my birthday. Because then they have to say it.

I am 27 now. I feel good about that. Lucky seven. Lucky seven on Friday the thirteenth! (that was my birthday)

Drunken Apple Cake with Blue Cheese Buttercream Frosting adapted from SP Cookie Queen

You heard right, that's blue cheese in the frosting. Be open-minded. Some frostings have cream cheese, right? And you like those, right? It's like that. It's like yum.

3/4 cup granulated sugar
1 cup peeled, cored and chopped apples (I used Galas)
1/4 cup wine, red or white (I used white)
3/4 cup unsalted butter, room temperature
3 eggs, separated
1 1/4 cups all-purpose flour
1 tsp. ground cinnamon
1 tsp. vanilla extract
1/4 tsp. sea salt

Combine sugar, wine and apples in a bowl and set aside.

Add egg whites to the bowl of a mixer and beat on high speed until stiff peaks form. Set aside.

In another bowl combine butter, egg yolks, flour, cinnamon, vanilla and salt, stir to combine. Add apple mixture and stir till combined.

Fold egg whites into the batter and scoop batter into 12 paper lined muffin cups.

Bake in 350 degree F oven for 16-18 minutes.

Blue Cheese Buttercream
1/2 cup unsalted butter, room temperature
3 cups powdered sugar
Pinch salt
1/4 cup crumbled blue cheese
2-3 tbsp. milk

Beat the butter on high speed for 2-3 minutes until it softens and lightens in color. Slowly add in powdered sugar and beat until combined. Add salt and blue cheese and slowly add in milk until the frosting is spreading consistency. I will add more if it seems too thick. The blue cheese really does pop in the icing and cuts through some of the sweetness.

Happy Birthday and enjoy your year! I never thought I'd ever see buttercream frosting with blue cheese! but since it's a drunken cake I guess it doesn't really matter! lol!

Happy Birthday! I think that you are very brave and adventurous whipping up this blue cheese buttercream frosting but I think this buttercream goes very well with this beautiful apple cake. Great choice and combination!

27 is a wonderful age, I hope you had the happiest birthday ever. I think everyone is entitled to a special day of celebration, sometimes I like to milk it and stretch it out into a week. He he. I hope you liked the icing, I like what you did with your cake.
