Chocolate Chip Cookie Dough Cupcakes

 
I have made...an abomination.

 It came to me in the night.  In a dream.  In Portland.


 Beware the dreams that come to you in Portland.

A cookie cake.  A cakey cook (that's me).  A doughy monster (that's sometimes also me).


A hybrid of the most decadent order.

 A birthday treat for my one-year old (hooray!), but I only dared let him eat half of one. 


Lest he never sleep again.


The cake is brown sugar vanilla, with chocolate chips.


The filling is eggless raw cookie dough.


The frosting is a buttery confectioner's.


Do you dare?  Do you dare?  Do you dare?

My boy is one.

High fives all around.

Chocolate Chip Cookie Dough Cupcakes

For the cupcakes:
2 3/4 cups all-purpose flour
1 tablespoon baking powder and 1 teaspoon baking powder
1 cup (2 sticks) unsalted butter, softened
1 cup white sugar
1 cup brown sugar
4 large eggs, at room temperature
1 cup milk
1 teaspoon vanilla extract
1/2 c mini chocolate chips

For the filling:
1 c butter
1/2 c granulated sugar
1 c brown sugar, well packed
1 t vanilla
2 tablespoons milk (add more or less to get correct texture, slightly softer than regular cookie dough)
2 1/4 c flour (I like to do half regular and half whole wheat)
1 t soda
1 t salt
1/2 c mini chocolate chips (adjust to taste)

For the frosting:
3 1/4 c powdered sugar
1 c butter at room temperature
1/2 t vanilla extract
3 T milk
mini chocolate chips to decorate

First, make the cupcakes.  Preheat oven to 350 degrees F.  Line 2 (1/2 cup-12 capacity) muffin tins with cupcake papers.

In a small bowl, combine the flour and baking powder. Set aside.

In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth. Add the sugars gradually and beat until fluffy, about 3 minutes. Add the eggs, 1 at a time, beating well after each addition.

Add the dry ingredients in 3 parts, alternating with the milk and vanilla. With each addition, beat until the ingredients are incorporated but do not over beat. Using a rubber spatula, scrape down the batter in the bowl to make sure the ingredients are well blended.  Fold in chocolate chips.

Carefully spoon the batter into the cupcake liners, filling them about 3/4 full. Bake for 20 to 25 minutes, or until a cake tester inserted into the center of the cupcake comes out clean.

Cool the cupcakes in tins for 15 minutes. Remove from the tins and cool completely on a wire rack before icing. 

While the cupcakes are cooling, make the filling and icing.

For filling:
Cream together butter, sugars, vanilla, and milk. Sift together flour, soda, and salt; add to creamed mixture. Stir in chocolate chips.

For frosting:
With an electric mixer, beat together sugar and butter. Mix on low until well blended, and then on medium for another two minutes. Add vanilla and milk, beating on medium for another minute.

To assemble:
When cupcakes are fully cool, cut holes in the middle with a sharp knife.  Fill a piping bag with filling, and fill holes with filling (weird sentence).  Top with frosting, and sprinkle with mini chocolate chips.

Awww, Happy 1st Birthday to your little boy! These cupcakes look so yummy, and what a lucky little guy to have homemade cupcakes for his first b-day! I love your frosting - he must have enjoyed them. :D
