Lime Sugar


I am making cupcakes.

For a friend.

For her wedding.

Eeee!


Pressure.

One of several flavors I will be doing is lime, and I've been wracking my brains trying to figure out how best to flavor something with lime.

Flavor syrups are too sugary.  Essential oils are not always food grade.  Extracts are too expensive.

Specialty ones are, at least.  They sell lemon at the store, and yes I thought about just using that and dying it green.  I bet I could have passed it...


But no!  That is cheating, and this is a friend.  A serious friend.

Well, what about...lime sugar?

Zested lime, rubbed into a cup of sugar with fingertips?

Locked in an airtight container, stored for a week?


Will it work?  Taking bets now.  We'll find out next weekend.

And if not, well, one of the benefits of high pressure baking is you get to do lots of experiments.

If it doesn't work I guess I will just have to make more cupcakes and try again!

Someone hold me while I cry frosting tears.

Can't wait to hear how it tastes! My favorite blueberry muffin recipe calls for lemon rind, and I love that hint of lemon, so I tend to add 3-4x the called for amount. Now I'm curious if I tried making lemon sugar, if that would enhance the flavor . . . Keep us posted! :-)

good idea talina! i did this once with grapefruit, which gave me the idea, and it totally worked. i bet you could make some delicious lemon sugar for blueberry muffins!
