Tie-Dye Cupcakes for the 4th of July

Happy late 4th! Did you have a good one? I hope you got to eat some barbecue (unless you are vegetarian or vegan, in which case I hope you got to eat something else delicious...also if you are not American I still hope you got to eat something delicious on the 4th).

Cupcakes are fantastic, aren't they? They are my absolute fallback for big group dinners.

Small, portable, bursting with adorability (and sweet, sweet, buttery flavor).

Everyone always wants a cupcake. I don't care who you are.

YOU WANT A CUPCAKE RIGHT NOW. Don't argue with me.

Now, all of that said, I really think I could have done more with these. They were meant to have a sort of tie-dyed look. The cakes came out the way I pictured them, but the frosting? Too light, too streaky. I was afraid if I mixed it too hard it would turn purple, all right?

Also would have looked better piped instead of just shmeared. Didn't pipe it.

And also I would have liked to put something on top. Like red foil stars, or glittery powder. Or a giant, flaming sparkler! On each one! Right?

Ah well. They got eaten anyway. Hooray for big group dinner gatherings!

Also: 5 days til baby. I am off now for a waddle, maybe that will shake'im loose.

Mwah!

Tie-Dye Cupcakes for the 4th of July

I have to say these cupcakes were a bit of an invention, a bit of a frankencake built from other recipes. More fun that way.

I made this cupcake recipe, but before baking, separate the batter into thirds in separate bowls. Dye one third blue, and one third pink (or red, if you are brave with the food coloring). Then plop them into your cupcake papers, one spoonful of each color at a time, until they are 2/3 full. Bake as in recipe.

Frosting was a very similar process. I used this frosting (I always do - it is a sweet, buttery confectioner's frosting that whips up to a perfect, almost meringuey texture) with milk in place of champagne. Then boom, same thing. Separate into thirds and dye respectively. Put into a piping bag (if you are not lazy, like I was) and swirl onto your lovely cakes.

Top with flaming sparklers!*
