Peachy Pecan Bleu Cheese Pizza

Peachy Pecan Bleu Cheese Pizza (adapted from Cheeky Kitchen)

4-8 rounds of pizza crust, baked
1 bottle fresh peach jam
1/2 cup bleu cheese crumbles
1/2 cup pecan halves
drizzle olive oil
1/4 cup brown sugar
1/2 teaspoon garlic salt
1/2 teaspoon fresh, coarsely ground pepper
2 cups spinach

In a small saucepan, combine the pecan halves, a teensy drizzle of olive oil, brown sugar, garlic salt, and pepper. Cook over medium-high heat, stirring constantly, until the brown sugar mixture has caramelized on top of the pecans. Transfer to a sheet of parchment and allow to cool completely.

Spread a thin layer of peach preserves atop your pizza rounds or naan bread. Sprinkle a handful of bleu cheese on top. Add your candied pecans. Top with a ton of spinach. Serve and enjoy!

I have also been trying some "outside of the box" recipes this week as well.

Food is an interesting, fun pursuit.
