Daring Bakers: Chocolate Pavlovas with Chocolate Mascarpone Mousse



I have joined an online community called the Daring Bakers. Once a month they offer a new challenge, many of them issued by professional chefs. So I am giving it a try!

Lots of posts lately! I am supposed to be in Mexico, but there have been lots of delays with the cars and such. So I might as well stay home and blog right?

The June 2010 Daring Bakers’ challenge was hosted by Dawn of Doable and Delicious. Dawn challenged the Daring Bakers’ to make Chocolate Pavlovas and Chocolate Mascarpone Mousse. The challenge recipe is based on a recipe from the book Chocolate Epiphany by Francois Payard. It was a lot of fun to make, and definitely outside of my usual zone. A very rich, dark chocolatey taste, but I think my favorite part was the creme anglaise! It came out with the texture and taste of a melted, delicious vanilla ice cream. I could eat THAT by the spoonful.

I do have to try making meringue...your pavlova looks like it turned out perfectly!
